What is Gumbo? 
Gumbo is a well-known traditional dish, especially popular in Louisiana and famous in New Orleans aka the Big Easy! It is typically made with a dark brown roux, poultry (such as chicken or turkey) or shellfish stock, and vegetables like onions, bell pepper, celery, and garlic.

It contains okra which is a pod-like vegetable, and is thickened with either filé powder or okra pods and often served over rice. Gumbo has a long and varied history. The word “Gumbo” comes from the West African word “kingombo” which means okra. There are many different stories about how it was created, but most agree that it was a result of fusion of three cultures: West African, Native American, and European (French / Spanish) in Louisiana in the 18th century.
